Easy Broiled Shishito Peppers (GF, DF, Vegan)

Ingredients:
-1/2lb. to 3/4lb. Shishito peppers
-Avocado oil (or another healthy high heat oil, avoiding industrial oils)
-Salt
-Cracked black pepper
Directions:
-Turn your oven broiler on & place a cast iron pan in the oven to heat up.
-In a bowl to the side, mix together the peppers, enough avocado oil to coat well, a good pinch of salt, & cracked black pepper.
-You will know that your cast iron pan is hot enough when you sprinkle or flick a bit of water into it & it sizzles.
-Once your pan is hot enough, throw in the dressed peppers & cook for 3 minutes.
-Take the pan out of the oven & give the peppers a flip, in order to evenly blister.
-Put back in the oven & cook for another 3-6 minutes, depending on your desired level of blistering. (In the above photo, I had put them back in for 4 for minutes, but if you would like them a bit more charred, keep them in a bit longer)
-Remove from the oven, place onto a plate, & let cool for a minute before diving in.
Sometimes I eat them as is & sometimes I whip up a dipping sauce. This could look like a mayonnaise made with a healthy oil or unsweetened coconut yogurt with sriracha, it could be toasted sesame oil with chile paste & a touch of honey, or you could sprinkle with Furikake. There’s no one way to enjoy them. Sometimes a squeeze of lemon or lime is all you want. Let me know if you try them at home!
