Grain Free Nut Butter & Chocolate Chip Cookies (GF, DF)
Hey There,
I’m always trying to fulfill cravings at home with ingredients I trust, so let’s make Gluten & Dairy Free Nut Butter & Chocolate Chip Cookies. They just happen to be grain free as well! Recipe as follows…
Ingredients:
-1 cup unsweetened nut butter (here I used peanut butter)
-1 egg
-1/2 cup pure maple syrup
-3/4 cup arrowroot starch
-1 tsp vanilla extract
-1/2 tsp sea salt, plus extra for sprinkling on top
-1/4 - 1/2 cup chocolate chips or chunks
-Optional: Hemp hearts
Directions:
-Preheat oven to 350F.
-In a mixing bowl, evenly mix the nut butter, egg, pure maple syrup, arrowroot starch, vanilla extract, sea salt, & a bit of optional hemp hearts together into a dough.
-Add in the chocolate chips or chunks & fold in.
-Roll into roughly 16 1” dough balls & refrigerate for 20 minutes. If you’d like them to be slightly bigger, aim for 12 cookies.
-Remove from the refrigerator, gently flatten to your liking using your hand & make sure the circular shape stays intact.
-Use a fork to make the classic peanut butter cookie imprint on top of each cookie & sprinkle with a bit of extra sea salt.
-Bake for 10-15 minutes until the top of the cookies becomes a bit more firm & the bottoms begin to brown a bit. You still want them to be gooey inside, so be careful not to overdo it.
-Allow to cool for about 5 minutes if you can & enjoy!
