The Perfect Roasted Sweet Potato (GF, DF, Vegan)

I suppose you can call this a recipe, but it’s more like a tool that I want you to lean on & know is always there for you. Below is a rough guide to making perfectly roasted sweet potatoes…
Ingredients:
-Sweet potatoes, cut in half lengthwise
-Avocado oil
-Sea salt
Directions:
-Preheat oven to 425F.
-Line a baking sheet with parchment paper & arrange your halved sweet potatoes across.
-Drizzle avocado oil over the sweet potatoes along with an even sprinkling of sea salt.
-Use your hands to make sure all sides of each sweet potato is fully coated.
-Place the sweet potatoes cut side down & roast for 30-45 minutes, until browned on the cut side & perfectly mushy inside. Enjoy!
