Seedy Chimichurri (GF, DF, Vegan)

This recipe is SUCH an important tool for me! I’m always looking for ways to make our food work harder for us without sacrificing flavor. On it’s own, this Chimichurri is delicious on top of everything, but with the addition of hemp seeds, it can now be used as an extra dose of omega-3’s, protein, & fiber. Most Americans do not get enough of any of those…at all. Parsley is also rich in vitamins A, C, & K along with minerals including calcium, magnesium, & iron, supporting everything from our immune systems to bone health. Mix all the ingredients together & drizzle this Seedy Chimichurri over anything from a perfectly cooked steak, to simply roasted veggies, to the top of a bowl of cozy soup. It’s versatile & makes simple food taste much more exciting while providing you with extra nutrient density. Huge wins here! It also stores well in the fridge. There recipe is as follows…
Ingredients:
-1.25 cups olive oil
-1/2 heaping cup parsley, finely chopped
-1/2 heaping cup cilantro, finely chopped
-4 cloves garlic, minced
-1 small red chili pepper, seeds & stem removed, finely chopped
-1/3 cup hemp seeds
-2 tbsp red wine vinegar
-1 tsp sea salt
-Freshly cracked black pepper, to your liking
Directions:
-Add all ingredients to a bowl & mix together.
-Taste & adjust seasoning as you like & drizzle on top of whatever meal or appetizer you choose. Enjoy!
