Umami Crunch Tuna Salad (GF, DF)

If you’re looking for an easy gluten & dairy free protein source that just happens to be delicious, salty, sweet, crunchy, & makes for great leftovers, try this Umami Crunch Tuna Salad. You can eat it as is, add it on top of a bed of crisp leafy greens like arugula, or even double for meal prep. The recipe is as follows…

(Servings: 1)

Ingredients:

-2 tbsp coconut aminos

-2 tbsp balsamic vinegar

-1 tbsp olive oil

-Pinch of red pepper flakes

-1 5oz can wild caught tuna, drained

-1/3 cup cherry or grape tomatoes, cut into smaller pieces

-1/3 cup red onion, cut into thin slices with a microplane

-1/4 cup sliced almonds, toast first if you like

Directions:

-In a mixing bowl, whisk together your dressing using the coconut aminos, balsamic vinegar, olive oil, & a pinch of red pepper flakes.

-Break up the drained tuna & add to the bowl along with the cut tomatoes, sliced red onion, & sliced almonds. Stir to evenly coat. Enjoy!
