Tomato Vinaigrette (GF, DF)

Have you ever pulled together a bowl of bits & bobs of leftovers that you’re trying to make a meal out of but they need something to liven them up? I use this easy Tomato Vinaigrette to do just that as well as make simple salads & roasted veggies more interesting. It celebrates our favorite juicy Summer tomatoes & offers a punch of flavor with very little effort. Good healthy food doesn’t have to be complicated & choosing seasonal ingredients makes the flavors stronger. I really love the warm color & how creamy this dressing gets without adding any dairy. Ingredients:
-2/3 cup olive oil
-1/3 cup balsamic vinegar
-1 heaping cup of roughly cut ripe tomato
-Juice of 1/2 lemon
-1 clove garlic
-Big pinch of salt
Directions:
-Add all ingredients to your blender, blending until completely smooth & creamy.
