Chilled Tuna Salad With Grated Tomato (GF, DF)
Hey There,
I threw this Chilled Tuna Salad With Grated Tomato together after a hot day by the pool recently. I wanted something light & balanced. It’s so easy to make, so please use this loose recipe below…
(Servings: 1-2)
Ingredients:
-Sea salt
-2 large heirloom tomatoes
-Juice of half lemon
-Black pepper
-Roughly 6 baby potatoes, as many as you like
-Good quality olive oil
-1 tin of tuna (I used a tin packed in olive oil)
-Thinly sliced white onion, as much as you like
-Fresh tarragon
-Red pepper flakes
Directions:
-Put a medium pot of water on to boil. Add a generous pinch of salt.
-In the meantime, grate one of the heirloom tomatoes into a bowl. Discard the remaining tomato skin or salt & eat as a cooking snack.
-Add lemon juice, a bit of sea salt, & freshly cracked black pepper to the grated tomato & stir to combine.
-Add the baby potatoes to the boiling water. Boil until just becoming fork tender, but still have some firmness. Once they’re done, transfer directly to a bowl of ice water.
-Spread the tomato mixture evenly across a serving plate as the bottom layer. Drizzle with a bit of good olive oil.
-Cut the second heirloom tomato into bite sized chunks & place evenly across the plated tomato mixture.
-Cut the cooled potatoes in half & place evenly across the plate with the tomatoes.
-Use a fork to take the tuna out of the tin in large chunks & place across the plate as well.
-Top with thinly sliced white onion to your liking, a bit of fresh tarragon, a pinch of red pepper flakes, freshly cracked black pepper, & another drizzle of good olive oil. Enjoy!
